During our first year of marriage, I somehow wound up subscribed to the Cooking Club of America magazine. It was a pretty good magazine, but I ultimately chose not to renew my subscription. They sent way too much spam. One of the recipes found in this magazine, though, was an upside-down pear cake. Pears are Zach’s favorite fruit, so I made the cake and it became an instant hit.
Upside-Down Pear Molasses Cake
- 1/2 cup melted butter
- 1/2 cup chopped walnuts
- 1/4 cup brown sugar
- 2 large pears, peeled & sliced
- 1/2 cup butter, softened
- 1/3 cup sugar
- 1 egg
- 1/3 cup molasses
- 1 1/2 cups flour
- 3/4 tsp cinnamon
- 3/4 tsp nutmeg
- 1/2 tsp salt
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/2 cup warm water
Step 01: Preheat oven to 350°F. Pour the melted butter into a 9 inch square baking pan. Sprinkle with nuts & brown sugar. Arrange pear slices over the nuts.
Step 02: In a large bowl, cream together the softened butter and sugar. Beat in eggs and molasses. Combine the flour, nutmeg, cinnamon, salt, baking soda, and baking powder. Add to the butter mixture with water. Spread batter over the pears.
Step 03: Bake for 35-40 minutes, or until a toothpick inserted comes out clean. Cool for 10 minutes and then flip it over onto a plate (so the pears are facing up). Serve with ice cream or whipped cream.
