Roasted broccoli is amazing no matter how it’s seasoned. But this *really* works well.
I love roasted broccoli! It’s so simple to make and you can dress it up in so many ways.
For a long time, Zach wasn’t so into cooked broccoli, but after having it roasted he quickly became a fan. Good thing, too, because I am currently obsessed with this recipe. 😛
Just so you know, I eyeballed this recipe. (In fact, I’ve made it twice now and I eyeballed it both times. 😛 ) These measurements are close to what I used, though.
The Best Roasted Broccoli
- 1 lb chopped broccoli
- 1 tbsp coconut oil (butter, margarine, and other oils work)
- 1 1/2 tsps dry basil
- 2 tsps onion powder
- 1/2 tsp garlic powder
- salt and pepper, to taste
- 1/2 tsp lemon juice
- grated Parmesan cheese, to taste
Step 01: Toss the broccoli onto a baking sheet covered in aluminum foil. Top it with oil and sprinkle it with the basil, onion, garlic, salt, and pepper. Wrap the aluminum foil up around the broccoli, like a ball. Bake at 400F for 40 minutes.
Step 02: Remove from the oven and put in a bowl or container, add the lemon juice and cheese. Toss the broccoli to distribute it evenly. Serve warm.
You can use either fresh or frozen broccoli, but it’s better with fresh. (Even though I used frozen broccoli for this post.)
This broccoli is so nice! I love tender roasted broccoli, seasoned or not. My dad makes a version of this with just butter and a bit of salt and pepper. It’s amazing with chicken or seafood.
If you follow me on Instagram, then you know I’ve been making a simplified, pan-cooked version of this with my breakfast eggs. It’s my new favorite recipe, definitely, especially since it is SO easy to make.
