Sausage gravy and biscuits are one of Zach’s favorite breakfast foods (and one of my favorite hangover foods). It’s also surprisingly easy to make!ย
Most people I know complain about the food from their schools. Zach and I aren’t those people. We loved our school meals (high school and college), particularly their breakfasts.
When Zach and I were in college, “biscuits and gravy” day (Wednesday) was one of his favorites…and one of the only times I could actually pull myself out of bed in time for breakfast. Their gravy was some of the best I ever had (which is sad, because a friend of mine worked in the cafeteria and I’m pretty sure I remember her telling me it came from a can). In my opinion, most cooks putย way too much pepper in their gravy. Which must be because people like it that way…but I am not one of those people.
I’ve always been pretty reluctant to try my hand at making sausage gravy. To be honest, I’m not the best at making homemade gravies. And I didn’t want to deal with the mess.
As it turns out, though, sausage gravy isn’t so difficult to make! And the mess is minimal–at least with this recipe!
Sausage Gravy and Biscuits
- 6-8 hot biscuits
- 1 tsp basil
- 1 tsp dill weed
- 1 lb pork sausage (turkey works, too)
- 2 cups milk
- 1/4 cup flour
- salt and pepper, to taste
Step 01:ย In a large skillet, fry the sausage until it’s completely cooked through, breaking it up with a spatula as it cooks.
Step 02: Add the flour and cook for another minute, or until the flour is mixed well into the sausage.
Step 03: Stir in the milk, dill weed, and basil, and cook until the gravy is very thick and bubbly. Whisk frequently. Once it’s thick, you can add more milk if you think it needs thinned.
Step 04: ย Season with salt and pepper. Serve over biscuits.
Also, I’ve found that this is the best hangover food. (For me, anyway. I gravitate towards anything even remotely greasy.) I actually froze what we didn’t eat and I’m saving it for an “emergency.” ๐

I would love to have this in my mouth! Except i’d have to use turkey sausage. Pork is a trigger for my migraines, which is odd I know. Thanks for sharing!
Honestly, I prefer turkey sausage over pork, but we got a bunch of it on manager’s special a while back and I decided to use it. Turkey would have been *much* better. Thanks for stopping by! ๐

As a true southern girl it doesn’t get better than biscuits and gravy but I’m one of those people who loads on the pepper. It’s not biscuits and gravy unless your mouth is on fire! This recipe looks so easy I have to give it a try though!
It could definitely use some spice! But the black pepper just doesn’t do it for me. Has to be red. ๐

We made biscuits & sausage gravy this morning! I’ve never used dill weed in it though so I’ll definitely have to try that next time.
Did you use regular sausage or breakfast sausage? We use breakfast sausage so it helps to season the gravy! And I too love this as a hangover meal…. ๐
