This pumpkin spice granola is lightly sweetened and makes a great autumn breakfast or movie snack. Make just the granola or add nuts, dried fruit, seeds, chocolate chips, etc.
Granola is one of my favorite cold weather snacks. Up until now, the only kind I knew how to make myself was double chocolate granola. Delicious, but I wanted something a little more…autumn-y.
So I decided to try pumpkin spice granola, which turned out really well.
Pumpkin Spice Granola
- 3 cups old-fashioned oats
- 1/4 tsp salt
- 2 tsps cinnamon
- 1 tsp pumpkin pie spice
- 3 tbsps brown sugar
- 2 egg whites
- 1/2 cup pumpkin puree
- 1/3 cup maple syrup, honey, or agave nectar
- 1/4 cup oil, butter, or margarine (melted)
- 1 tsp vanilla extract
- dried nuts, berries, seeds, etc. (optional)
Step 01: Preheat the oven to 325. Combine the dry ingredients in one bowl. Put the wet ingredients in another bowl and stir well. Add the wet ingredients to the dry ingredients and stir until well-combined.
Step 02: Line a baking sheet with parchment paper. Spread the mixture over the pan in one even layer. Bake for 1 hour, but check every 20 minutes to break it up and stir it.
Step 03: Once the granola has cooled, you can add nuts, berries, seeds, chocolate chips, or whatever you want to it. I added dried cranberries and glazed walnuts.
Store this in an air-tight container for 1-2 weeks. Assuming it lasts that long. 😛
This is a great snack, but it also serves as a quick breakfast! Zach loves it. It’s lightly sweetened, but not too sweet. (So I dusted it with powdered sugar…which didn’t make much of a difference.)
Baking this made my apartment smell amazing, by the way. 😛
