Pumpkin french toast is made like regular french toast, but with pumpkin yeast bread. Makes a great fall breakfast!
About once a year, I make pumpkin yeast bread. Which is not like regular pumpkin breads–it’s more like a savory sandwich bread. It doesn’t take long to start drying out, as homemade bread tends to do. But when it does it makes great pumpkin french toast.
Pumpkin French Toast
- 2/3 cup milk
- 4 eggs
- 2 tbsps maple syrup
- 1 tsp vanilla
- 1/2 tsp pumpkin pie spice
- 1/4 tsp salt
- 6 slices pumpkin yeast bread
Step 01: Whisk together ingredients and dip the bread in the mixture.
Step 02: Cook french toast on medium-high heat until golden brown. Serve with favorite topping.
Optional: Use a cookie-cutter to cut the bread into pumpkins before cooking, if desired.
You can obviously do this with whatever bread you want (Pepperidge Farm’s Pumpkin Spice toast bread is great). I really like it with the yeast bread. And it gives me something to do with the bread once it stops being fresh enough for regular sandwiches.
I cut thick slices of bread for the pumpkin french toast, so it goes through the remaining loaf quickly.
