Meatball Tortellini Soup is a savory soup, filled with kale and turkey meatballs. It’s quick and easy to make, as well!
I’ve been in the middle of a project (a work project, not a “for fun” project…not that I’m not enjoying myself) and I forgot to make a post for today. Fortunately, I have one in my “just in case” folder.
Zach has made this soup for me a few times now and it’s delicious. In fact, now that I look at the pictures…I’d really like some.
Let’s get on with it, shall we?
Meatball Tortellini Soup
- 1 1/2 tbsps onion powder
- 6 cups chicken broth
- 16 ounces of meatballs (we make our own turkey meatballs–that will be a future post)
- 8 ounces cheese-stuffed tortellini
- 2 cups chopped kale or spinach
- 1 tsp garlic powder
- 1 tsp dried basil
- 1 tsp red pepper flakes (optional)
- salt and pepper to taste
Step 01: We used a pressure cooker for this, but you can also use a pot. So there will be two directions. If you use homemade meatballs, you’ll make those first, set them aside, and then move on to the soup directions.
Regular Pot: Add chicken broth, garlic powder, onion powder, and basil to the pot. Begin boiling on medium high heat.
Pressure Cooker: Add all ingredients to pressure cooker. Securely lock the lid and set for 5 minutes on high.
Step 02: Yeah, this is a really easy soup to make. 😛
Regular Pot: Once the liquid has starting boiling, add tortellini, meatballs, kale/spinach, and celery. Boil for about 15-20 minutes or until tortellini is tender. If your tortellini is stuffed, it may not even take that long.
Pressure Cooker: Perform a quick release.
Step 03: Add salt and pepper to taste and serve!
This soup is SO GOOD. I love using stuffed tortellini shells. I’m also really tempted to use stuffed ravioli next time. We’ll see!
