Leftovers are great, yeah. I live off of leftovers. But maybe you’re going out of town or you have a date. Maybe you live alone and one day of leftovers is fine, but you don’t want days and days of the same meal.
No matter the reason, recipes for two are convenient…but also somewhat difficult to find. Which means variety is also difficult to get. Unless, of course, you have the time and creativity to develop your own recipes. Not all of us do, so I’m here to help!
My husband and I have no kids, so we only need to cook for two people. Like I said, I love leftovers and I often make meals that will keep us from having to cook again for a few days. But sometimes we want something a bit different, and this recipe is certainly different. But in a good way. 😛
I love artichokes. Zach isn’t as a big a fan, though. So I’ve been making this particular meal for myself when he has a conference out of town. I’m actually pretty terrible about cooking for myself when I’m alone, and had gotten into a habit of just making prepackaged meals because they were easy. Then I found this recipe, which is also pretty easy and really good.
Italian Chicken for Two
- 2 chicken breasts
- 2 roma tomatoes, gutted and diced
- 1 jar (6 oz) marinated artichoke hearts, drained
- 1/8 cup grated Parmesan
- salt
- pepper
- onion powder
- garlic powder
- 1 tsp basil
- 1 tsp Italian seasoning
- shredded mozzarella cheese
Step 01: Preheat your oven to 400°F. Dice your tomatoes and tear your artichoke hearts into smaller pieces. In a bowl, combine tomatoes, artichoke hearts, Parmesan, and Italian seasoning.
Step 02: Place chicken into a greased casserole dish. Sprinkle liberally with salt, pepper, onion powder, garlic powder, and basil. Spread the tomato-artichoke mixture on top.
Step 03: Bake for 30-40 minutes, or until a meat thermometer shows that the chicken is fully cooked. Remove from oven, add cheese, and bake for another 10 minutes. Serve over pasta or rice.
This has a very unique and savory taste and will be perfect for that “meal for two” you needed. If you need a quick side dish, I’d recommend vegetable tian, though you’ll need to half the recipe for two people. It makes a good bit of leftovers.
The great thing about chicken recipes for two people? They can be doubled or tripled very easily if you’re expecting more people.
