Just for kicks and giggles, I decided one night that I wanted to honey roast some almonds. They turned out pretty well, so I’m going to share the recipe with you. (Also, you can switch the honey out with maple syrup. Apparently that works pretty well, too, but I haven’t tried it.)
What you will need (duplicate as needed):
- 1 cup almonds
- 1 tbsp honey
- 1 tbsp brown sugar
- a pinch (1/8 tsp) salt
Step 01: Preheat oven to 375°F. Mix all ingredients.
Step 02: Line a cookie sheet with parchment paper (or aluminum foil sprayed with cooking spray). Spread the almonds on the cookie sheet and bake for 10-15 minutes. Keep an eye on the almonds. There is a very short time frame between the time where the almonds come out nice and tasty and where they burn and smell horrid. That time frame for me was about one minute. Keep an eye on your almonds.
Step 03: Let cool just long enough so you can touch them and then remove them before they start sticking. Put them in the container you plan to store them in. And you’re done!
These are great with granola and yogurt. Or, as Zach found, as a mid-morning snack. I woke up the morning after I made these and they were completely gone. But I did get to try them. They were quite nice.
