I’m just about done with the project I’ve been working on, but I think it might need an extra day to dry just to be sure. So today I’m going to post my honey chicken recipe! It’s very good. Sweet and savory.
What you’ll need:
- 1 large chicken breast
- 2 tbsps olive oil
- 2 tbsps honey
- 3 tbsps soy sauce
- 1/4 tsp garlic powder OR 1 whole clove, minced
- 1/8 tsp black pepper
- 1 zucchini and 1 cup broccoli (OR 2 cups frozen vegetables)
- 1 cup rice (when dry), cooked and drained
- 2 tsps cornstarch
- 1 tbsp water
Step 01: Put 1 cup of dry rice into a small pot and cover with water. Boil. Keep an eye on it while you work on the rest of this. (I tend to forget and let it burn. -_-) On medium heat, heat the olive oil and then brown the chicken in it. Don’t worry if it’s still slightly pink, it will get cooked some more.
Step 02: In a small container, mix together honey, soy sauce, garlic, and pepper. Put it on top of the chicken and let it simmer for a minute. (NOTE: You can make this less salty and more sweet by swapping the measurements of the honey and soy sauce.)
Step 03: Add the frozen vegetables. I used green beans (which goes very well) and cook them until they are completely heated through. Then, in a small container, mix together the cornstarch and water until it is completely blended. Add it to the chicken and vegetables and stir. It will thicken the sauce. (If you don’t mind the thin sauce, you can skip this.)
Step 04: Serve the chicken and vegetables over the rice. Enjoy!
This will make about two servings. It’s fantastic for when you want Chinese food, but you really don’t want to pay or consume all the calories. Plus, you know where these ingredients have been. 😛
