I hate mornings. The unspoken rule in my family seems to be, “When Chelsey gets out of bed, don’t make eye contact. Don’t even move. Maybe if you stay perfectly still, you’ll get lucky and she won’t even notice you’re there.” In reality, as long as no one talks to me before my first cup of coffee, everything will be fine. That first cup is where I pull myself together and make sure my head’s on right. If I can keep from getting frustrated with someone before my first cup of coffee, it’s good omen and the rest of my day will go smoothly. 60% of the time, this works every time.
So I hate mornings. But I love breakfast. But I hate cooking first thing in the morning. Life is so complicated!
The best solution, when faced with a conflict where neither side can win, is to compromise. Which is why I’ve started keeping mason jars filled with pancake mix.
This way, it’s half done. All I have to do is add a couple wet ingredients, which, in reality, I could mix the night before and keep in a baggie in the fridge…and then all I have to do is dump, mix, and heat.
I’ve tried just making the batter and refrigerating it, but for some reason the pancakes come out weird. So I do it this way instead.
Homemade Pancake Mix
- a 16 oz. mason jar
- 1 1/2 cups all-purpose flour
- 3 1/2 tsps baking powder
- 1/2 tsp salt
- 1 tbsp sugar
- 1 1/4 cup milk
- 1 egg
- 1/4 tsp vanilla
- 3 tbsps melted butter
Step 01: Sift together the dry ingredients and then pour them into the mason jar. Keep until you’re ready to fix the pancakes, and then proceed to the next step.
Step 02: Add the wet ingredients and stir until well-combined and smooth. Disperse 1/4 cup of batter onto a frying pan or griddle. (I turn my griddle to 250 or 300. On the stove, I think that would be medium-high heat.) Cook first side of pancakes until the top starts to bubble (about 3 minutes). Flip over and cook the other side until golden.
My handwriting isn’t fantastic. It used to be, but college destroyed it. 😛
I made the label out of a piece of scrapbook paper flipped over (which works if the paper isn’t double-sided), but you can use anything. I traced around the lid of the jar and then just taped it down, so I can switch it out when I want to.
This is really handy, and especially useful if you know you have to make pancakes in the morning (say, for a special breakfast for birthdays), but you know you won’t feel like it. This way, the majority of the work is done!
It definitely makes mornings a little easier. 🙂

Haha, I know exactly how you feel! I have never been a morning person. And the only thing I can ever force myself to make – aside from a sandwich or cereal – are a couple of boiled eggs. I’m definitely better about lunch.
