This homemade apple pie uses crisp apples, lots of spice, and is topped with a sweet, crunchy streusel.
I’m not sure who came up with the phrase, “Easy as pie,” but I’m starting to think they were being sarcastic. Pie is not easy…though mostly because pie crusts are not easy. It’s a messy business and takes a lot of physical labor.
So it’s a good thing pies are so damn delicious, isn’t it?
Especially apple. I love all kinds of pies–pumpkin, blueberry, blackberry, cherry, coconut cream, etc. But I always come back to apple. I’m not sure what it is. The texture, the sweetness of the apple mixed perfectly with cinnamon. Everything about apple pie is great.
I first started making this pie during the first year we were married. I got it out of a magazine and, since then, I’ve made some adjustments to it. It’s pretty much perfect. 😛
Homemade Apple Pie with Streusel
For the filling:
- 6 cups apples, peeled and sliced
- 2 tbsps sugar
- 1 tbsp butter or margarine, melted
- 2 tsps lemon juice
- 1/4 tsp cinnamon
For the streusel:
- 1 cup light brown sugar
- 3/4 cup flour
- 1/2 cup old-fashioned rolled oats
- 1 tsp cinnamon
- 3/4 cup butter, chilled and cut
Step 01: Use a premade crust or my perfect pie crust recipe. While the crust is chilling in the fridge, preheat your oven to 400*F and make the apple mixture. Put your peeled, sliced apples in a large bowl and stir in the remaining filling ingredients. Pour it into the crust, making sure it’s layered evenly. Put the pie back in the fridge.
Step 02: For the topping, combine the brown sugar, flour, oats, and cinnamon. Add the butter and mix until well-combined. This is easier to do with a food processor, but you can use a hand mixer.
Step 03: Pull the pie out of the fridge and layer the streusel topping over it. Make sure it’s spread out over the pie and then press down gently so it adheres.
Step 04: Bake the pie for 15 minutes. Reduce the temperature to 325*F. Bake for another 45 minutes or until the topping is golden brown. Cool on a wire rack for at least 2 hours.
My favorite apples to use when baking are Granny Smith. They’re nice a crisp and they generally stay that way once baked. So you don’t wind up with apple mush inside your pastry.
If you don’t like the tartness of Granny Smith, you can use Honeysmith instead. They have a nice, sweet taste and they also maintain their structure after baking.
Of course, if you prefer a certain apple, you can use whatever you want. But if you’re new to apple pastries, those are my suggestions.
I think the BEST thing about this pie is the streusel topping. Are you even surprised? Considering all the things I’ve put streusel on over the years, you shouldn’t be. 😛 Not only is it tasty, but it also means I don’t have to make a second pie crust. Score!
