Does anyone else get tired of deciding on lunch every day? Even working from home, I can’t decide on what to have, so I just grab some quick thing, whether I should eat it or not. When I worked in an office, it was a lot of the same. I went to Subway or the gas station (not a lot of choices near the plant I was working at) and picked up something quick that I could eat at my desk.
And when I can’t decide what I should have, I tend to go for something unhealthy just to stave off analysis paralysis. There are more important decisions than what to have for lunch. Which is also a problem, because I need to be eating more vegetables.
A few weeks ago, I made the unilateral decision to not decide on what to make for dinner anymore. I was sick and tired of meal planning.
“Will these leftovers last 2 days, or 3?”
“When do I need to start thawing ground meat? (And did I remember to?)”
“Should I wait to buy vegetables, if this meal isn’t happening until the end of the week?”
I was also sick of having to measure out each individual meal to make sure it was exactly how much I was supposed to be eating.
I’m done with all of that.
Once a week, we make something different or we go out. The rest of the time? It’s seasoned fish or chicken, roasted potatoes, and steamed broccoli. Night after night. You’d think I’d be sick of it after two weeks. Honestly, though, I like not having to make that decision anymore. I also like knowing how long dinner will take, how many calories is in it, etc.
(Though it does put a bit of a damper on the whole “food blogging” thing. Though I’ve been doing well with keeping up. I actually have a backlog of posts that need to go up.)
Back to the point: I decided to do the same thing with my lunch. Now I have the same thing every day.

For Christmas, my in-laws got us a Ninja pro blender with blender cups. The cups are AMAZING. I use them to make the smoothie, because they’ll make one serving and they’re easy to clean. If you want just the blender cups, you can get the Nutra Ninja Pro. We also use this digital food scale from The Sharper Image and we really like it.
Easy Healthy Green Spinach Smoothie Recipe
- 1/4 cup (80 g) plain Greek yogurt — 60-70 calories
- 1/2 cup (100 g) frozen peaches — 60 calories
- 1 (160 g) banana — 130 calories
- a handful (30 g) spinach — 7 calories
- a handful (80 g) carrots — 33 calories
- water, enough to thin out the smoothie as desired (I use about 1/4 cup)
Total: 300 calories
Step 01: Put the yogurt, water, peaches, and banana in the blender or blender cup. (In the blender cup, I stack bananas, peaches, yogurt, water. That way, the yogurt and water are the first things to be blended.) Blend until smooth.
Step 02: Add the spinach. Blend until smooth.
Step 03: Add the carrots. Blend until smooth.
If you want, you can add flax seeds and blend that, too. But this is fine as is.
Part of the reason I chose to do this was because my doctor had been getting on me about getting 5 fruits and vegetables each day. I’m not very good at doing that. I’ll eat about 3 carrots and then decide I’m done.
This way, I’m getting at least two servings of vegetables in one meal. I generally grab a fist-fill of each one, so the amount of vegetables I’m getting around about the size of a small salad. And all I have to do is chug it. 😛
You know what’s awesome? Knowing exactly what I”m going to have every day. Knowing how many calories is in it. And knowing I’ll be full until dinner time. My grocery bill has gone down a lot, too, now that I’m not buying different things for different days. I’m calling this a win.
