Firstly, note that this is not a quick and easy chicken dinner. This is very fast and easy to prepare, but cook time is lengthy. So if you’re in a rush to get dinner on the table, this is not the meal you’re looking for. However, if you don’t feel like spending half an hour on preparation, but are willing to wait on something tasty, then try this. Preparation takes about five minutes and consists of taking all of your ingredients, throwing them into a baking dish, and baking. And it’s quite good.
What you’ll need:
- 3-6 chicken breasts
- 1 bag frozen vegetables (mixed, green beans, broccoli–whatever you want, it doesn’t matter)–fresh and canned will also work
- 3-5 potatoes, cut into cubes
- 1 package Italian dressing mix (or Italian dressing)
- salt and pepper
Step 01: Preheat your oven to 350°F. Put your chicken breasts in your casserole dish. Put the cut up potatoes next to the chicken. You can peel the potatoes beforehand if you like, but it’s easier not to, so I don’t. I didn’t do it in this order, but put the dressing/dressing mix over the chicken and potatoes. And then put the vegetables beside the chicken. (Mine overlapped. Not a big deal.) Put salt and pepper on your veggies as desired.
Step 02: Bake for 1 hour. Remove from oven and let sit for about 10 minutes before serving. Done!
That’s it. Yes, I’m serious. You probably want to use a larger dish than I did (to make it easier to serve multiple people), but this was the only clean one I had. Also, I’ve seen variations of this where they’ve put a whole stick of butter on top. I found that unnecessary (and I’ve tried it both ways). It doesn’t taste any different without the butter and the butter only adds extra unwanted calories and fat.
