Chocolate covered peanut butter Ritz cookies are two Ritz crackers, slathered with peanut butter, and covered in chocolate. So…exactly what you probably imagined. This is a huge hit at Christmas!
I’ve been making these for Zach’s parents since he and I started dating and they love them. Even if I don’t have time for any other cookie, I generally try to make these. They’re very easy, but time consuming. So to make it faster, I’ve adopted a new method: recruit people to help! Namely, Zach. He says he hates it, but he gets to eat every cookie he breaks so it’s not that bad.
We generally prefer to use Almond Bark instead of chocolate for these. There is a reason! Almond bark will completely set at room temperature and won’t melt in your hands the way chocolate does. It’s also easier to dip and doesn’t burn as easily as chocolate does (particularly white–I hate melted real white chocolate). Feel free to use whatever you like, but i much prefer the almond bark!
Chocolate Covered Peanut Butter Ritz
- 1 jar creamy peanut butter
- 1 box Ritz crackers
- milk chocolate Almond Bark (2 packs)
- white chocolate Almond Bark (2 packs)
Step 01: You’re not going to bake anything, but you will still need a baking sheet. Cover it with whatever you want–aluminum foil, wax paper, parchment paper, etc. I like the aluminum foil because it wraps so nicely around the baking sheet. Next, take two crackers and spread peanut butter between them. Continue this process until your baking sheet is filled with cracker sandwiches.
Step 02: Melt your chocolate according to the instructions on the package. Dip your cracker sandwich in the chocolate and roll it until it is completely covered. Use a toothpick to knock the excess chocolate off.
Step 04: If you decided to buy two different kinds of chocolate (as we do–I don’t particularly like white, but everyone else does), then drizzle opposite colors over your crackers.
Step 05: They’ll harden if you leave them out, but it will go much faster if you put them in the fridge. I usually leave them in for about 15 minutes. Once done, remove them and put them in their tins.
These are my father-in-law’s favorite. I usually make multiple types of cookies, but I’m starting to think I should just stick to this one. Honestly, they kind of remind of a Reese’s cup, but crunchy. 😛
They can take some time to put together (particularly spreading the peanut butter), so Zach and I like to turn on a show while we work. It makes the time go faster. 🙂
