This easy slow cooker baked bean and sausage stew is great for an easy weeknight dinner. It has a great texture and it’s very hearty. But it’s still perfect for summer.
Who likes easy dinners? This girl! I especially love easy dinners I can just toss into a crock pot and forget about. Who doesn’t, right? And what’s easier than tossing some beans, meat, and spices into a crock pot and then walking away? That’s all you need to do for this bean and sausage stew.
Even though this is a heartier dish, it’s perfect for summer. This is for two reasons:
- It goes in a crock pot (duh).
- Baked beans! The traditional American summer BBQ side dish.
How could this possibly go wrong? (Hint: it can’t.)
Easy Slow Cooker Baked Bean and Sausage Stew
This is really quick to make AND it can be a freezer meal. It only takes 4-6 hours in the slow cooker, if that. Since all of the ingredients (except the green peppers) are precooked, anyway, they just need to be heated up. So you can make this even quicker on the stove top. Use frozen peppers and the only work you need to do is opening packages (huzzah!).
Kids don’t like peppers? Leave them out. No big deal. I like them, but they’re not a key ingredient. The tomatoes are a little more necessary, but they can be pureed so they’re easier to hide. Remember to drain them first, though!
The black beans can be substituted with any other type of bean. Black beans are our favorite, though. 🙂
As for making this meal vegetarian? You can. But at that point, you’re just eating a can of baked beans. Which…you do you, I guess.
Zach calls this “a more sophisticated version of beans and weenies.” Well, he’s not wrong. 😛
Want to turn this into a freezer meal? No problem! Just dump everything into a freezer bag. It can be stored for up to 6 months. When you’re ready to cook it, just let it thaw overnight and then pour the contents of the bag into a crock pot.
If you want even more control over the ingredients, you can make your own baked beans, boil your own black beans, etc.

- 1 tbsp onion powder
- 1 green bell pepper, diced
- 1 tbsp olive oil
- ¾ tsp dried sage
- ¾ tsp cumin
- 1 pound smoked turkey sausage
- 1 (28) oz can baked beans
- 1 (15 oz) black beans
- 1 (14.5 oz) can fire roasted tomatoes with garlic
Instructions
Step 01: Place all ingredients in a slow cooker and mix together. Cook on low for 4-6 hours.
