The countdown to fall has begun and I’m pumped. Usually I spent August doing pumpkin recipes, but I decided to start a little differently this year (though we’ll have next month’s pumpkin celebration as usual).
Because I spend so much time creating pumpkin posts, I don’t spend as much time as I’d like with apples. I want to remedy that this year, but I suppose we’ll just have to see.
Anyway, this recipe needed to happen today because I have a post on Wednesday that it will be used for. This is basically exactly like my pumpkin spice granola, but with apple.
Apple Pie Granola
- 3 cups old-fashioned oats
- 1/4 salt
- 1 tsp cinnamon
- 2 tsps apple pie spice
- 3 tbsps brown sugar
- 2 egg whites
- 1/2 cup apple sauce (sweetened or unsweetened)
- 1/3 cup maple syrup or honey
- 1/4 cup butter
- 1 tsp vanilla extract
- dried apple, cut into smaller pieces
Step 01: Preheat the oven to 325F. Combine the dry ingredients in one bowl. Put the wet ingredients in another bowl and stir well. Add the wet ingredients to the dry ingredients and stir until well-combined.
Step 02: Line a baking sheet with parchment paper. Spread the mixture over the pan in one even layer. Bake for 1 hour, but check every 15-20 minutes to break it up and stir it. (I wound up only baking it for about 45 minutes. Depends on your oven. Keep an eye on it.) Breaking it up really well is important, otherwise the egg whites will cause it to become mushy.
Step 03: Once the granola has cooled, you can add nuts, berries, seeds, chocolate chips, or whatever you want to it. I added dried apple pieces.
This could be more or less sweetened depending on your preferences. I would go with more sweetened (just add more sugar), but since I was using it for something else, I decided to just leave it as is. (Update: I used it in my fall trail mix.)
Also, this made my house smell AMAZING. As you would expect. 😛 I’m so psyched for fall! But I’m trying really hard to keep from using my autumn scents so I don’t wear out the novelty before it even begins.
